Dom Perignon Rose Vintage 2002: The launch of Dom Perignon’s dark jewel

On January 23, 2013, Dom Perignon revealed its latest rose vintage, Dom Perignon Rose Vintage 2002, in Istanbul. To mark this special day, Chef de Cave Richard Geoffroy invited two renowned Creators to interpret Dom Pérignon Rosé Vintage 2002: chef Jean-François Piège and Thierry Wasser, perfumer for the house of Guerlain. For the day in Istanbul, Thierry Wasser created the fragrance “Rose Nacrée du Désert”.

At Istanbul’s Esma Sultan Mansion guests experienced for the first time the Rosé Paradox menu created by Jean François Piège. Main course included Iskenderun shrimps, chestnut chips, baked nutmeg squash, paired with Dom Pérignon Rosé Vintage 2002. Horseradish cream, smoked salmon, crackers, veal, capers and parsley were offered as first course, along with “Scallop ceviche, citrus, black truffle, beets and scallops.” Then it was time for “Antalya baby spinach and truffle, paired with Dom Pérignon Rosé Vintage 2002.” “Clementine, baba and saffron” were the apotheosis of the night.

At Salt Galata Art Center guests discovered also dishes inspired by local ingredients in an experimental workshop designed by Jean-François Piège. In the same place and with some of the same ingredients, they learned from Thierry Wasser about the associations that led to the creation of “Rose Nacrée du Désert”.
