Fabien Rouillard, pastry chef at Fauchon, imagined a French summer pastry collection with a retro touch inspired by the French seaside resorts. In fact the fruits were transformed in a pastry of absolute lightness and freshness.
Entitled “Fauchon Les Bains”, the collection is available from June to August. The eclairs are called Deauville, Trouville, Cap-Ferret, and Les Sables.
The patisserie collection includes also: “le fraisier de Biarritz”, a jelly with strawberries and raspberries in a white chocolate chantilly with Madagascar Bourbon Vanilla, strawberries Mara des Bois and a blanket of almond paste; a light flourless cake named l’Abricotier de La Baule; l’Opérette and Fauchon cake.
