Top dining chefs and restaurateurs are shattering the notion of fixed dining addresses by taking their kitchens on the road. In a bid to expose new audiences to their haute cuisines and redefine the traditional dining experience, ‘World’s best restaurant’ is embarking on world tour this summer. The Roca brothers from El Celler de Can Roca, currently ranked the world’s best restaurant by World’s 50 Best Restaurants, are taking their culinary show on the road with plans to stop in London, San Francisco, Santiago Chile, Hong Kong, and Phoenix.

For Roca brothers Joan, Josep and Jordi this is the third gastronomic tour conceived for diners who can’t travel to Girona, Spain where the restaurant is located. El Celler de Can Roca takes 40 members of the restaurant staff on a gourmet tour which pays homage to each host city.

With the help of young emerging talents from each new city, the team is creating menus inspired by local ingredients and culinary heritage.

“The reason this 55-seat contemporary Catalan restaurant is back on top of the world is the trio’s equal brilliance in ensuring that they never stop feeding their own (and their team’s) knowledge and imaginations through unusual initiatives,” World’s 50 Best Restaurants body of elite diners motivated their choice for El Celler de Can Roca.

While the chefs are using their visit to learn about local food customs, two hospitality students are offered an internship at the Girona restaurant in Spain.

The newly-published Michelin Nordic Guide 2016 features two new 3 Star restaurants; the first in the Nordic region to receive this award. Maaemo in Oslo and Geranium in Copenhagen thereby join an exclusive club of only 116 restaurants worldwide.

“This year’s guide is particularly exciting because, as well as awarding two new 3 Stars, we have also, for the first time, expanded the reach of our guide outside of the main cities and into the countryside. We have handpicked the very best restaurants and hotels for our readers from across Denmark, Finland, Norway and Sweden – and this has resulted in a bumper crop of new Stars for 2016,” said Rebecca Burr, editor of the guide.

Greater coverage of the region means that Fäviken Magasinet is included in the guide for the first time: this restaurant with rooms in Järpen has entered the guide with 2 Stars.

Burr said, “Fäviken Magasinet offers a unique dining experience in the idyllic setting of a remote hunting estate. Cooking here is highly assured, and has its essence in the surrounding land.”

As well as its new 2 Star, Sweden boasts an impressive five new 1 Star restaurants: Sushi Sho, serving sushi in Stockholm; Borgholm, offering artistic dishes on the island of Ӧland, and 25th floor Upper House, which serves refined cuisine in Gothenburg. Stimulating 1 Star cooking also comes from Daniel Berlin in his family-run restaurant in Skåne-Tranås, and from PM & Vänner in Växjö with its sophisticated cuisine based on ‘forest, lake and meadow’.

Denmark ups its Star count in 2016 with four new 1 Stars shining alongside its newly awarded 3 Star restaurant, Geranium. Kadeau offers original dishes at a remote beachside restaurant in Bornholm, Frederiksminde serves creative cuisine in a hotel of the same name in Præsto, while at Henne Kirkeby Kro, menus celebrate the surrounding Henne farmland, with some produce from their own kitchen garden.

A Michelin Star also returns to Kong Hans Kælder which serves classic French cooking in the heart of Copenhagen. Norway’s Kontrast (Oslo) and RE-NAA (Stavanger) also gain 1 Star, while Smalhans (Oslo), Nook (Stockholm) and Somm (Gothenburg) have been awarded a Bib Gourmand.

is one of the hottest dining destinations in Bangkok and a “temple of Thai gastronomy“, according to food critics. Australian chef David Thompson who helms Nahm is the 2016 recipient of the Lifetime Achievement Award for this year’s edition of Asia’s 50 Best Restaurants.

Chef David Thompson‘s respect for traditional Thai dishes, as well as his skill in cooking them at Nahm Restaurant in Bangkok, has won him an international array of admirers.

David Thompson – chef, restaurateur, raconteur, mentor and inspiration – prefers to be known simply as a cook. But the recipient of the 2016 Diners Club Lifetime Achievement Award for Asia has achieved much in an extraordinary globe-trotting 30-year career.

“I still have the same innocent joy in cooking for its own sake – the timeless pleasure that I had when I started out, which makes me terribly lucky. I’m still a craftsman and a cook, rather than a chef or restaurateur, I suppose,” explained the winner.

Born and raised in Sydney, Australia, he was trained in classical French cooking and worked in a number of professional kitchens before a revelatory visit to Thailand in the late 80s changed his world. He fell in love with the country and its people, as well as the food, prompting his first spell living and working in what is now the 55-year-old’s adopted home.

The successful opening of Nahm in Bangkok itself in 2010 that marked Thompson’s elevation to culinary greatness. The restaurant, situated within the stylish Metropolitan Hotel, adheres strictly to traditional Thai recipes and ingredients, never compromising on quality or, indeed, its dishes’ heat. The result is an international dining destination that remains the benchmark for high-end cooking in Asia; a former Best Restaurant in Asia and the launchpad for many successful chefs’ careers.

“This accolade has given me cause to reflect, which is not something I usually do, and wonder, ‘Where did it all go?!’ While I am always slightly embarrassed by awards, receiving something as significant as this, voted for by my peers in the industry, does make me proud,” commented Thompson.

The one thing that Nahm has never tried to do – whether in London or Bangkok – is to cater to what the customer likes or expects. My first priority there has always been to be faithful to a cuisine in order for people to be aware of what Thai food is and can be,” added chef Thompson.

The fourth edition of Asia’s 50 Best Restaurants will be announced on the evening of Monday 29th February at a gala ceremony in Bangkok, Thailand.
